IMPLEMENTASI BILL OF MATERIALS PADA SISTEM POINT OF SALE UNTUK MANAJEMEN STOK BERBASIS BAHAN BAKU DI INDUSTRI KULINER
Abstract
Pengelolaan stok pada industri kuliner memiliki kompleksitas tinggi karena produk yang dijual umumnya tersusun dari beberapa bahan baku dengan komposisi tertentu. Sistem Point of Sale (POS) konvensional umumnya hanya mengurangi stok produk secara langsung tanpa mempertimbangkan keterkaitan dengan bahan baku, sehingga berpotensi menyebabkan ketidaksesuaian data stok dan kesulitan dalam menghitung harga pokok produksi. Penelitian ini bertujuan mengembangkan dan mengimplementasikan sistem manajemen stok berbasis bahan baku menggunakan konsep Bill of Materials (BOM) pada aplikasi POS berbasis web bernama Cavaa dengan framework Laravel dan basis data MySQL. Setiap produk dihubungkan dengan bahan mentah melalui struktur resep, sehingga jumlah produk yang tersedia dihitung secara otomatis menggunakan pendekatan limiting factor analysis dan harga modal produk dihitung berdasarkan harga rata-rata tertimbang bahan baku penyusunnya. Sistem juga mendukung konversi satuan unit dengan menyimpan seluruh quantity dalam satuan dasar. Pengujian dilakukan menggunakan metode Black Box Testing dengan lima skenario test case yang mencakup pencatatan stok, perhitungan harga modal, kalkulasi quantity produk, dan transaksi penjualan, seluruhnya dinyatakan valid.
